This coffee comes from a farm owned by Ibu Eti Sumiati. She owns a farm located at 1500 masl in Kamojang, West Java. We’ve been working with wanoja cooperative for about the last 3 years. This is the second year we did experiment with anaerob fermentations, this year we also experiment a new process with yeast involved. Stay tune!
The pickers at Wanoja, only pick the fully ripe cherry. After the cherry was picked, then the coffee went through a controlled fermentation. They put the cherry into a tank, creating an anaerob condition. This condition, allowing only specific bacteria and yeast during fermentation, resulting clean and intense tropical fruit flavor. The coffee is then sun-dried for around 30 days until reach 11% moisture.
